Culinary Techniques for Healthy School Meals includes 51 video lessons that provide step by step demonstrations of basic culinary techniques. The video lessons feature chefs from the Culinary Institute of America. A professional uses the right culinary technique for the food that is to be prepared. Each of the lessons includes video demonstrations of one or more culinary techniques.

The demonstration shows a step-by-step way of preparing the food to meet quality standards. To be sure to understand each step of a new culinary technique, it may be desirable to watch the video lesson more than one time. Each video lesson is two to three minutes long. They can be viewed online in streaming video, or the WMV file can be downloaded to your computer to play at a later time. The video lessons have been incorporated into the Culinary Techniques online courses. They are also available on DVD from the Institute of Child Nutrition (ICN); call for details.
